Evaporated Fruit
Apples or Peaches
Servings: Ingredients:
2 gallons of cut up fruit (apples should be peeled. Do not peel peaches)
8 cups sugar
1/2 cup vinegar
Directions:
  • Combine ingredients and let stand overnight
  • Cook slowly until thick as desired
  • Stir to prevent scorching
  • Freeze or place in hot pint jars and process 15 minutes in boiling waterbath canner
  • Note: A less sweet version of this recipe calls for 2 gallons fruit, 5 cups sugar and 1 cup vinegar
