Evaporated Fruit
Apples or Peaches

Ingredients: |

2 gallons of cut up fruit (apples should be peeled. Do not peel peaches)
8 cups sugar
1/2 cup vinegar |
| Directions: |
- Combine ingredients and let stand overnight
- Cook slowly until thick as desired
- Stir to prevent scorching
- Freeze or place in hot pint jars and process 15 minutes in boiling waterbath canner

- Note: A less sweet version of this recipe calls for 2 gallons fruit, 5 cups sugar and 1 cup vinegar
